I would say they definitely cannot be used interchangeably. The biggest difference I see is that "ritual" implies repetition, whereas a ceremony can be a one-time event. Also "ceremony" implies a degree of formality that a ritual need not have. If you call brushing your teeth a "morning ritual," it just means you do it every morning; if you call it a "morning ceremony" it implies you are doing something rather unusual and perhaps really, really like brushing your teeth.
